Sandwich Ideas!

As requested by Freak!

















Sandwiches are great because they are simple, have a wide range of possibilities, and delicious!


Some of my personal favorites:

Chicken Breast Sandwich!

Take a chicken breast and marinate it in some fajita sauce for 30 min. Grill the chicken breast on a Foreman or something similar. While that is cooking I make the bread. Take your favorite loaf and spread butter on one side. On that same side season with a little garlic salt and put 1-2 tbls of grated parmesan on it and throw it on a hot skillet to create some parmesan crusted bread(I also use this bread when making grilled cheese, delicious). Melt some cheese on it like you would for grilled cheese. I also top mine with sauteed bell peppers and onions if I have some. For sauce I use salsa ranch. It is exactly what it sounds like, mix salsa and ranch together and use it as spread. Slap the cooked chicken on there and assemble!

I also do something similar to this but instead of chicken I fry up some roast beef from the deli!



Probably more work then you were looking for so I will give you a few more ideas for some simple sandwiches cause even I don't want to cook sometimes.


For spread try finding some chipotle sauce or make some salsa ranch as explained above. I don't use chunky salsa for this, restaurant style Totinos works well. Tomato basil mayo, chipotle mayo(both elaborated below) or other flavored mayo. Southwest Veggie Dip is really good on sandwiches too! It's usually in the vegetable section at the grocery store. Cub Foods has it if you live somewhere with them. Also Italian vinaigrette.

Random toppings I like: Spinach instead of lettuce, peppercinis are awesome if you like peppers, onions are good on anything, bell peppers, jalapeƱos, mushrooms, cucumber, etc. Try different types of cheeses. Smoked cheddar is amazing, pepper jack, muenster, swiss, provolone, etc. Now add some more cheese.

Meats I always get from the deli, and don't get the stuff that says water added. I usually use a variety of meat in my sandwiches. Sure a ham and cheese sandwich is good, but add some salami, pepperoni, roast beef, turkey, pastrami, etc. I always try to use more then one type of meat.



Tomato basil mayo: Get some sun dried tomato paste, basil, and mayo and mix them together. Only need a little tomato paste it goes a long way.

Chipotle Mayo: Get a can of chipotle peppers and use a blender to blend one in with your mayo and maybe a little ranch.

If you like these or the salsa ranch just make a larger batch and keep it in the fridge for easy use.

Homemade Pizza!

CRUST:

Ingredients:
1 (.25 ounce) package active dry yeast
1 cup warm water
2 cups bread flour
2 tablespoons olive oil
1 teaspoon salt
2 teaspoons white sugar
1 tablespoon Italian seasoning
1 teaspoon garlic powder
1 teaspoon onion powder

Directions:
In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
In a large bowl, combine 2 cups bread flour, olive oil, salt, seasoning, white sugar and the yeast mixture; stir well to combine. Beat well until a stiff dough has formed. Cover and rise until doubled in volume.


SAUCE:

Ingredients:
1 (6 ounce) can tomato paste
6 fluid ounces water (1 can full)
3 tablespoons grated Parmesan cheese
1 teaspoon minced garlic
3/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
(oregano and basil can be replace with italian seasoning)
1/4 teaspoon ground black pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon dried red pepper flakes
salt to taste

Directions:
1. Mix all ingredients and stir!



PIZZA:

Once the dough is done spread it on a round greased pizza pan (it should be fairly thin). Brush the the dough with melted butter and garlic powder. Apply sauce and toppings. I put shredded parmesan cheese on the crust. Bake at 350 for ~20 minutes.

Chili!

Ingredients!

1 pound ground beef
1 pound Italian sausage
2 (15 ounce) cans chili beans in medium sauce
2 (15 ounce) cans pinto beans
2 (28 ounce) cans petite diced tomatoes
1 (6 ounce) can tomato paste
1 large yellow onion, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1 jalepeno diced
1/2 cup bacon bits
4 cubes beef bouillon
1 Can dark beer (guinness)
1/4 cup chili powder
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon dried oregano
2 teaspoons ground cumin
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon white sugar


Directions!

1.Cook ground beef and sausage, drain and set aside.

2.In large stock pot cook diced onions and peppers until onions are soft and clear.

3.Add beer and cook until half the liquid is gone.

4.Add tomatoes, paste, and beans. Heat to boiling and add rest of ingredients.

5.Let that simmer for 2-3 hours and its done!
